A Simple Pot Pie


Hi friends! Hope you're all having a great start to OCTOBER. This week's been busy for our family, so I've been trying to plan a few meals which are easy {but also make great leftovers}. Our current fall weather has me craving all the fall comfort foods: so a pot pie for today was a must! I actually had all of the ingredients in my fridge/pantry, so I thought I'd try making a simplified version of one. This was SO easy and tasty. The kiddos loved it too, so I thought I'd share the recipe below.


I only used a few ingredients to make this simple pot pie, I'm sure you could add whatever you like to this:: or you could make it from scratch! But this mama didn't have time for that this morning, so I worked with what I already had.


Ingredients:

One pie crust {I used a frozen one}

2 cans of pot pie soup mix {or you can add your own diced chicken, corn, peas, gravy sauce}

1 can of croissant rolls

Salt and pepper to taste


I've been wanting to use up these 2 cans of pot pie soup, which I grabbed on a whim at the store. I also try to always keep frozen pie crusts in my freezer. I love making a quiche every few weeks {another simple recipe here on my blog}, so I used one of those pie crusts for this dish. Another fridge staple for my family, these croissant rolls. YUM. The kiddos love when I make piggies in a blanket with these, or they make a great side for pasta or soup nights. I always try and keep a few of our favorite things in our fridge and pantry... anything that makes life a little easier, right?! I really HATE going to the store to grab just one item, so I try to be aware of what we have in our fridge and freezer every week.


Let me know if you try this recipe and enjoy it. It's such a great comfort fall food.


Directions:

Preheat oven to 375 degrees

Put pie crust in baking dish

Add soup cans, salt and pepper

Top with croissant pieces {I cut the croissants into strips and layered onto the top}

Cover loosely with aluminum foil

Bake for 35 minutes at 375

Take foil off and let the top get a little crispy for the remaining 5 minutes

Enjoy with a side salad or broccoli!
