Spinach & Kale Salad


Mixing things up a bit today on the blog and sharing a go-to simple favorite of mine: this spinach & kale salad! I love a good salad... But I like a lot of toppings. I'm not a big fan of plain jane salads {aka: "boring salads"}. I always try and spice up my salad by mixing in some great veggies which is not only tasty but also adds amazingggg color! The salad I'm sharing with you today my husband even said he loved! That's huge.

This mix is SO easy and quick to make. It's a great healthy option for lunch or dinner {and especially to have on those busy days and nights when you just need a simple meal!}... Plus, if you buy a few of the ingredients in bulk, you could make yourself a few meals for the week. I actually made a huge batch of this salad for my husband and I this week, so all I have to do for meal time is enjoy the mix as is with a little dressing or add a few extras. Extras such as: bacon, grilled chicken, cottage cheese, parmesan, tomatoes, etc... So if you're looking for a quick and simple meal full of healthy goodies then this is your jam! Sharing this recipe below.

Ingredients:

Spinach and kale mix

Red cabbage {shredded}

Broccoli Slaw {I added a whole bag, about 16 oz.}

Cranberries {1 cup}

Shaved Brussel Sprouts {2 cups or so}

Sunflower seeds {1/2 cup}

Apple Cider Vinaigrette {or poppyseed dressing!}

Extras:

Tomatoes {various}

Bacon {2 slices or turkey bacon}

Cottage cheese {dollop or two}

Parmesan cheese

Serve and Enjoy!
